Welcome to INDU, serving up a memorable Sri Lankan inspired restaurant experience, blending the welcoming charm of village culture with a fresh and unexpected take on rich Sri Lankan flavours.

Our food philosophy revolves around coastal and village-inspired dishes that hero the freshest seasonal produce. Since our launch in November 2015 in Angel Place, Sydney, and our Melbourne location on Collins Street in February 2021, INDU has consistently delivered flavour-for-all through an inventive menu where vegan and vegetarian dishes are proudly crafted with the same love and attention as their meaty counterparts.

Sam Prince Hospitality Group

As part of the Sam Prince Hospitality Group (SPHG), which includes Hicks Hospitality, we're dedicated to pushing the boundaries of hospitality.

Our founder, Sam Prince, a philanthropic entrepreneur and medical doctor of Sri Lankan heritage, partnered with Ian Hicks, a successful Melbourne-based businessman and philanthropist, to create SPHG in 2013. Born to Sri Lankan parents, INDU draws on his heritage and especially his mother’s cooking.

  • Tom Dalton

    GENERAL MANAGER - MELBOURNE

    Tom is the heart beat of our Melbourne venues.
    His background working in multiple hospo roles on Hamilton Island & Little Creatures in Freemantle shows his love for adventure. Arriving back in Melbourne, he was an integral part of Mamasita & Hotel Jesus before he was welcomed to the SPHG family in mid-2023. His love for food and inspiring people to grow is evident in his work.
    You’ll catch him at the bar sipping a Mezcal Margarita.

  • Ishy Patel

    HEAD CHEF - MELBOURNE

    Ishy joined our family in late 2023, and we have loved seeing his inspired creations already! He has a love for all cuisines and it shows. He has already developed a strong team to guide in the kitchen & we can’t wait to see where 2024 takes him. Keep an eye out for some new menus launching soon.

  • AMBRA NOACK

    RESTAURANT MANAGER - SYDNEY

    Our man from Mongolia, he was raised in Berlin & arrived in Australia in late 2017. Starting his SPHG journey as a bartender in Mejico, he i fell in love with all things agave & juniper. Working at all 3 Sydney venues, he is now settled as Restaurant Manager at INDU. When he’s not chatting all things INDU with his customers, you’ll find him enjoying an ice cold lager.
